Are we allowed for instance: completing one year of a particular course and transfer to a different course and study in the first year?

Yes of course :)

Usually you'll have to reapply to UAC to transfer, but there are lots of other specifics such as internal transfers and mid year transfers that I wont go into until you're more specific.
