If you are realistic with your goals and have worked consistently through the year then you should be able to accurately guess your bands for your subjects.

Yup if you reach the cut off mark then you will be sent an offer.
Most acceptances for universities ( apart from USYD) is a numbers game, if they have left over spots in the course they let people who didnt reach the atar in, so don't stress out if you just fall short, you might get an offer...
Don't worry too much about the scaling of standard maths, you can smash it in the HSC and get really good marks from it. ( it was my highest scaled mark in my HSC)

I would advise against picking subjects purely on their scaling.
If you believe you are equally talented and ( more importantly) motivated in one of the subjects then go for it.
Otherwise i'd advise against just picking high scaling subjects based off of the scaling as you will probably enjoy...
