Can somebody help me with the folowing dotpoints.

-Gather and process infomation from secondary sources to explain the use of acids as food additives.

^^I cant find much anyware on that one.

and

-process infomation from secondary sources to calulate pH of strong acids given appropriate hydrogen ion concentrations.

^^ i dont really know what the DP is asking...is that just how u use the log button on you'r calulator??

Kinda, but you have to recognise that strong acids disassociate completely. Even with diprotic (or triprotic) strong acids, we assume (even though it's not completely true) that all H's have ionised.

For that, they use acids as they are helpful in killing bacteria/ pathogens without generally affecting the taste of the food too much... it is used as a preservative.

acids lower the ph making conditions unsuitable for bacteria therefore does not compose
also used as a meat stabiliser to prevent break downof fatty acids

acids have been used as a preservative for years because they prevent food spoiling by microbes. eg vinegar's been used for pickling things.. um.. like pickles... hehe...

sulfuric acid (also sulfide compounds) have been used in dried fruits etc to prolong their shelf life (so some ppl can't eat dried fruit cuz they have allergic reactions to the acid).

phosphoric acid is used in cola drinks.

i like the preserving bit :) hehee.. but the eating bit is better...

anyways, many week organic acids are used as falvouring agents in food. For example, the famous Citric Acid :)

Citric Acid is used in food to give a sour taste, for example, lemon sherbet, fruit juices. It is also a common household chemicals used for cooking and may come in solution or crystals.

and i don't think someone's mentioned this

but vitamin c is ascorbic acid- thus ascorbic acid is added into food for the vitamin c nutritional factor i think thats worth knowing

hmm is that so? i thought the primary preservative constituent of cola was carbonic acid according to H2O(l)+CO2(g)---->H2CO3(aq)
anyhows i don't think cola needs a preservative for two main reasons:
1) bacteria don't survive well on metal surfaces...especially for aluminium as it is toxic...
2) would dehydrate due to osmotic processes...

please correct me if im wrong~

Acids of one kind or another are a major component of natural foods. The acids that are added to food are made by microbial fermentation and are chemically identical to the natural acids found in fruits (phosphoric acid is the exception, being a mineral acid, not found in nature in the Free State). Besides imparting sharpness of flavour, acids are used because the overall acidity of foods can be crucial. In jam-making for example the acidity of the fruit determines its setting properties. Acids also have preservative and antioxidant properties.

yep... like they give you the mole of H+, then you calculate the pH.

the whole point of the DP is for you to know how to calculate pH so they can give you some stupid multi-choice question on it.
