I read somewhere that PDHPE does not require stats but rather only trends.

The former does not apply whereas the latter does. With respect to HSC Core 1: Health Priorities in Australia, the PDHPE syllabus states the following:
Students do not need to know the latest statistics on the rates of illness and death. It is only important that they understand trends such as whether the prevalence of leading causes is on the increase, decrease or stable.
