i got an offer from a uni in melbourne and a uni in Sydney. I am from Sydney and want to take the year off and go overseas. I am not sure which course i want to do. Does anyone know if it is possible to defer both courses then decide next year which one i want to take up?

No. Apart from being totally unfair for other students, you cannot actually opt to defer a course until you have accepted it.

It is not possible for you to make your choice in one year's time. You must choose now, then defer through the appropriate channels at your chosen university.
