what kind of things should i include in the answer if it is an 8 mark question? in other words ... what the hell is epidemiology?

You should go through your text books and look this up. It's part of your syllabus point. For an 8 mark question, they'll probably give you a scenario and ask you to do an epidemiological study on it. But even then you have to include the theory involved. Hence, 8 marks.
