wedll for a start you could find yurself a pretty little text book bearing the name "food technology" look up product development and read it! haha, but if your lazy the information you would need to find out is all based around the specifications of the product you are manufacturing. Heres a little list of the production process:
Design Brief
Idea generation and screening
conduct Market research (looking at existing products and deciding what makes yours original, etc...)
In market research you have 2 headings, "Choice of sampling method" refering to target market selection, and "analysing data from market research"

Product specifications
Feasibility study


then make it ! Yeah i know its brief and its a bit late for you now but you'll need to know it for the hsc. If it doesn't help anyone, too bad, you should be looking at all the resources available to you...that includes Books people!
