What do they (the unis) use to determine suitability for entry into postgraduate law?

In particular I'm interested in UNSW Law, I don't know anything about postgrad law though.

ATM I'm doing Science/Arts at UNSW, and I'm waiting to see how things pan out, so I can do either Honours, or go into something postgrad.

It isn't Postgraduate you are after, It is Gradute. Postgraduate refers to a higher, more specialised field which you have previously studied in. eg. from an undergradte LLB to a Master's in LLB.

Graduate Law is extremely competitive (UNSW) and is based on the performance of both your undergradute degree and UAI. (soley academic). I'm not sure what weighting UNSW gives to the UAI but in USYD it is 25%. The other 75% is derived from your Bachelors degree.
Applicant;s who recieve a PhD, a Masters or an honours degree generally recieve an offer.

If your study during the course of your undergraduate degree is disrupted, you may write them a letter outlining your explanation. Authorised certificates may also help your case. eg. illness, etc.

at unsw i think it is also 75% academic and 25% uai....

Santaslayer is almost completely right, but Master of Laws is LLM, there is no such thing as "Masters in LLB" since that would be "Master of Bachelor of Laws".
