I am currently in my 3rd of my LLB / Econ degree, I am just about to finish my economics degree. Once i finish it, can I (for a lack of a better word), dis-enroll, and apply for a post-grad law degree at another university and gain academic credit for the units I have already done?

Yes you can, but i think you can only get credit for 1 year at the most.
