I'm reading up on them now and I have an idea of what I want to do, but do the students choose what case studies they want to do, or the teachers?

Generally the teachers will pick it.
If your class is focusing on Germany it is very likely you will get Leni Riefenstahl.
If your class is focusing on Germany it is very likely you will get Leni Riefenstahl.
