So is that just like, a the number of possible outcomes? A bit like financial expectation?

No, the sample space consists of all the actual outcomes themselves, not just the number of outcomes.

e.g. The sample space for a normal six-sided die is {1, 2, 3, 4, 5, 6}.

It's a set, so you can think of it as: if you do this exercise, ONE of the values has to be selected.

Ie. if you get someone to toss a coin the result will be heads OR tails - there are no other options. (No landing on edges!)
