Is it recommend to still do Trials for HSC practice. Or do them after I've done all relevant HSC exams possible?

I still recommend doing trials as they are good practice for the HSC as well, e.g. in 4U maths - often Q1-6 is harder in the trial compared with the HSC, and sometimes the HSC can give pretty nasty questions (HSC 2008 4U paper is an example I'd recall).
practicing trials also helps to relieve gaps of knowledge as well, so why not?
