anyone know what technique these are?

“It is always incomprehensible to a man that a woman should ever refuse an offer of marriage. A man always imagines a woman to be ready for anybody who asks her.”.

“the society of illiterate and vulgar”.

All of those quotes could be classified as allusions, as they could constitute a reference to an event/person/place etc. that is intended to be noticed by readers. We could say that there might be some religious/societal allusions within those quotes. Of course, that would ultimately depend on what their appropriate text is about.

Euphemisms could also be used, particularly in the third quote, as the words "illiterate" and "vulgar" could be used to replace some harsher words/expressions.

High modality could apply to all of those quotes as it is evident that the author has specifically chosen forceful wording and language to appear more assertive and dominant with respect to the content of the quotes.

Depending on the nature of the text and the frequency of quotes such as the ones listed, a motif could likely be present as the reader is able to perceive some kind of pattern/concept/theme in all three quotes.

With the first and second quotes, symbolism may be relevant, as the example of one person (in this case one man and one woman) could be perceived as a representation of a more complex idea/concept/theme.
