Does anybody know when we get our timetables, how much can we personalise them?

Well, in first semester you have to do BMS101, MATH187, PHYS141 and an elective, which means you'll have to check the timetable for each subject. Except law (I think) I'm pretty sure they don't do course-wide timetables cause most degrees allow electives.

If you have enrolled already, you can check the draft timetable for your subjects only in SOLS, click Subject Timetable about halfway down the lefthand side after you've logged in.
Unforunately UoW isn't like some uni's in that it actually shows you all your subjects in a timetable form (really wish they'd do that).

As for the personalisation question, it depends on how many tutorials/labs etc for your subject there are, which will determine how you can structure your day. For example, PHYS141 has classes spread over Wednesday and Thursday, although the Lectures say "And" so the assumption is you go to each. Then you choose your tutorial and your practical. Make sure you do this as early as you can to make sure you get the one you want.
Basically you'll have to fiddle around your labs etc (as well as your elective) to try and get the best timetable for you.

the enrollment info says we don't sign up tutes etc then...it doesn't say when we do though
