I'm going to disagree and say that you shouldn't do the UK for your case study. It's better to choose a developing economy because from what I've heard, sometimes there is a question in the HSC about growth and development. It's much more obvious with developing economies.

do Hong Kong or Ireland or maybe some smaller European nations such as Austria, Be unique, don't stick to the obvious.

China is the easiest to do research on/find statistics for. Economic growth and development strategies such as the 5 year plans are especially well publicised.
