Whats the different between major and minor?

A major is the discipline that you spend the "majority" of your program studying. The minor is obviously the other discipline(s) that you spend less units doing. If you look in the science handbook, you'll be able to find the definition of what defines and major and minor.

I don't think minors are recognised on the plaque when you graduate

e.g Student A is studying B Science with a major in Psychology and minor in Economics.

On the graduation Plaque it will read B Science (Psychology).
