I did my tutorial selection yesteray for introductory economics. I checked on my selections today and a workshop has been added and it is not enabled. When do we make the selections for the workshops and how long do the workshops go for? what are they all about?

You won't need to register for the workshop if its not enabled. From my experience, workshops are divided depending on what course you do, so you can get a better perspective on the topic in relation to your course.
Workshops are similar to tutorials - except you will find workshops to be slightly bigger. They can run for a hour sometimes even longer, but it should say on pweb how long its going to run for.
Don't worry too much about it, you will find out more about it next week during your first lecture.
