It is so flexible that you can dabble in afew subjects that interest you in first year and then decide where you want to go with that in second and third years. Think of it as your 'fun' degree!

Correct. Government now falls under Table A (Arts) area of study.
So for a major in Government you need 12 junior credit points of GOVT subjects. You can do one in semester 1 and one in semester 2 or you can do both in semester 1 or 2, aslong as you have 12 junior credits points from GOVT you can move onto senior Government subjects in years 2 and 3.
So that's 12 credit points tied up in Government, the other 36 credit points can be used however you want. You can pick something from Table B or you can pick other subjects from the Arts area.

For a major in Government and International Relations, students must complete the following units of study:

1. 12 credit points of compulsory junior units in Government and International Relations.
2. At least 6 units of study (36 credit points) of senior elective units of study selected from the units offered.

But what does it mean by 'credit points'? What's a 'unit of study'? And also what's a 'senior elective unit of study'?

A unit of study is just a subject, for example, GOVT1001 etc
For you second major, what are you interested in? The American Studies department looks to be swimming with cash. Lots of scholarships and exchanges on offer, plus you can get some of your Government subjects to go towards your American Studies major i.e. one subject, goes towards two majors!

The next thing that looked interesting to me was Political Economy, or Socio-Legal Studies, or even Psychology. Each of those are 6 credits each, right? So if that's 24 credits a semester, does that mean you finish all of those in one half a year?

Two maths subjects yet to be decided (thank you changing degrees!:s), can't remember what I put down for now
Protein Biochemistry
Introductory Immunology
Introductory Microbiology

Second Sem:
Human Biochemistry
Applied Microbiology
Anatomy/Physiology/might change one to Chem or something, seeing how I feel
