Is there any point in getting the books from companies such as excel that give the hsc past papers and answers? Could people just get the papers from websites? Why do these books even exist?

There is a very good reason why these books exists. Instead of going through hours on end extracting questions relevant to the syllabus, they do it all for you and throw in their own questions too.

All you have to do open the book and get stuck into the questions. Usually students get this book after they do the 2019 and 2020 hsc. And have run out of questions to do

and also because the extra questions the books add are often very specific or go beyond the syllabus to assist with additional understanding.
most of the books like ATAR notes or excel also have sample answers at the back as well
it's a good investment esp for the sciences

Yea they do remove some questions from past HSC and replace them with their own (I know this for math advanced due to syllabus change).

Aside from the reasons mentioned. Many of the older exams for subjects like sciences don't have any sample answers uploaded and so you wouldn't be able to check if your answer was correct or not. The books are useful in that respect too
