Keeping a log really isn't that big an ask, and if you actually do it every time you work on your assignment like your supposed to it's done pretty easy. Plus you can just do it in dot points as long as you make sure you note problems and how you fixed them.

Well I just write down notes for all the senior structures and do the reading and writing tasks in my textbook on the topics. I also use the excel book because it's got so much extra stuff.
