Generally its more effective to break down the points into dot points, dont know why, but it always seems to work better than just straight paragprahs for me.

If you are doing ext 1 English solely because you don't want an odd 13 units, when BOSTES take final marks they divide 2 unit courses into 1 units. For example they may only take half of your chem results. It really doesnt matter if you have an equal amount of units.
Why do you feel like you need to memorise all your essays? Its clear from Previous questions (including this years) that BOSTES is trying to shy away from pre-prepared essays, instead they want concepts. Just memorise some key concepts for each (Minus creative) and you should be fine to fit...
In regards to the SOR1, honestly, some light reading and possibly going over some prelim notes should make you fine for the HSC. The prelim SOR1 course was really simple and had a distinct lack of content. You should be fine to do it in year 12 as long as you put in a little bit extra.
Some tips
1) Know the layout (Use sub-headings, correctly formatted, Executive summary etc.)
2) Syllabus dot points (In almost all business responses, the questions will solely be based on dot points, which you expand on)
