Every time I post in a new thread, I get emails when there are new posts in the thread, and the emails claim I have subscribed to it. I've only in reality subscribed to two threads, but I get about a squillion emails each day.

Is it possible to stop this from happening?

I think you uncheck the "email notification" option when you're typing the post... and there's an unsubscribe link in the emails you get too.
