Physics - Physics 2 (Jacaranda) + Physics in Context
The new excel guides for the above sciences are quite good as supplementary texts.

Maths 2u/3u - Cambridge
Economics - Tim Riley
Advanced English - Your teachers, the internet and Top Notes

Past HSC Exam Papers are the best once notes have been made, the concepts understood and some practice questions done.

There have been literally hundreds of these "best textbook threads"...Go to each of your subjects sub forums, and find the stickied "textbook" thread, and read of those recommendations
