Pretty straightforward question - can I, or will I want to, do Commercial Law as a major if I'm doing Commerce/Law?

NO. If you look at the course requirements for majoring in commercial law, you'll find that you can substitute most of the prerequisites with law units anyway.

That's what I thought, but I didnt have time to go through and check all the law subjects for later years, and I didnt see anything that explicitly said that this isn't allowed. Thanks for clarifying
