Does assumed knowledge mean that you must know the syllabus or the contents will include the HSC topics ?

Its pretty straight forward dude. Assumed knowledge means that any topics you cover will assume you have atleast a basic knowledge of fundamental concepts of which subject is assumed.

Which particular subject? It will depend. You won't use everything from the HSC obviously. Have a look at the syllabuses for the specific courses (e.g. PHYS1131, CHEM1011 etc) you'll need to take.

Think of all the basic things which would apply to many different facets of Physics and expect that is what they determine as assumed knowledge.

I did university biology without doing any biology during Year 11 & 12 but I was still able to understand the content after knuckling down. You'll find that when they begin explaining things within the lectures, they will cover some of the basic knowledge anyway but don't expect it to be reviewed again.
