This year (prelim) I do 3U English, 3U Maths, Physics, Indonesian and Modern History.

My plan is to drop all 3 units of maths and pick up EE2, Indonesian Extension and History Extension.

I have heard that in some schools you must keep 10 units of your preliminary subjects (ie not drop to less than 10 prelim units before picking up Extension courses for year 12).

If I did drop 3U Maths, I'd be down to 9 units of my prelim and then I'd pick up 3 units for the HSC which brings me back to 12 units.

I've checked the board of studies website and as far as I know this is allowed, has anyone experienced any differently?

yeah, as long as you have more than 10 or more units it should be fine

Should be fine.
Only restrictions may come in the form of clashes in timetables allotments, which the school may rearrange if they feel nice, or just tell you to drop something if they're not.
