Which unis are the easiest to get into for med (undergrad) and how high would the requirements be (ATAR/UCAT/Interviews) (Can be Interstate)

Depends how you do for ATAR and UCAT, and especially your interview! If your ATAR/UCAT is on the lower side, your interview is going to pull you through. Definitely UoN seems to be the easiest (96 ATAR, 2.7k UCAT ish? but good interview obvi), other instate options like UQ (95 ATAR, 2.8k UCAT) seem to be quite popular.

Do you know how hard it is to get into James Cook University or UTas for medicine
