Well, the first definition from dictionary.com is
"The principles, theories, or methodology of scholarly historical research and presentation."
That summarises it pretty well - different ideas about how history should be constructed.

-whether the perspective of the historian will always influence the history,
-whether we can ever really know the truth about the past

yeah, basically the differing views of historians on their craft over time and how this influenced thier work. 'history of history'...i like it

From what my Great awesome wonderful amazing fantabulous Extention Teach (BTW he reads these) tells me, basically it's the study of the Historians rather than the study of history itself...hope i helped. ^_^
