Would it be equally acceptable to have a similar diagram but with the light coming from an external source (e.g. lightning strike), and say that the outside observer sees them as simultaneous while the inside observer doesn't?

When travelling at relativistic speeds, outside observers will see that the mass of the proton increases
So sub mo = mass of proton (from data sheet) and you should get a mass larger than the stated mass
