Hmmm...
I thought this would be a melisma (where they change the pitch of the note whilst staying on the same syllable), but I'm not really hearing this rolly thing you're talking about...
In the second extract I can hear that she's rolling her Rs, and swooping up or down, which I wouldn't refer to as melismas - I guess I would call it "vocal scooping".
But in the first extract, he's really not straying from the monosyllabic pitch and it's just a really well defined descending scale. I do hear some "vibrato" at 1:36, so that might be what you're referring to?
