What are the chances that a course currently listed as having no vacancies (not having a (V) next to it) becoming vacant between now and the late round? Basically is there any chance getting a late round offer from a course that has no vacancies atm? or should i not get my hopes up.

There is a chance if someone who has been offered a place in that course chooses not to accept that offer. That would free up a place.

oh wow.. so that means there is almost no chance seeing as everyone knows to accept their main round offer

That's the main way that vacancies occur now - people not taking up their offers - or deferring them of course.
