I know this seems like a stupid question, however i'm asking it anyway.

For example, for chemistry there are different classes to enrol in. Why would someone do Chemistry **** (Advanced or specialist studies), when they can do a much easier chemistry and get higher marks. Is there some form of alignment in doing a harder subject?

The science and or chemistry website will give guidance on the type of assumed knowledge background that might help a student decide which unit might be best for them.

The university offers these alternatives to offer academic challenge to students of different backgrounds, and provide pathways for the highest chiseling students to prepare them for high level studies in fields like chemistry.

While I am not suggesting this is the case for your situation, some students try to shop around for easy marks for the sake of gpa optimisation for later medical studies. Experience tells us that students taking those choices are often less genuinely motivated for the specific subject and that is reflected in the marks.

Ie do a subject for your academic passion for it and in the long run you will be rewarded.

For science, if you want high marks, pick the hardest course possible. The courses are all scaled - I believe they are scaled against each other so you'll find that advanced classes have effectively no fails (or very small amounts).

Also, it's a bit hard to describe how the difficulty compares because we all only do one of them. However, based on looking at both courses, they are generally very similar (almost the same). The advanced version usually has a bit more content and/or slightly harder work but really, it's not much difference.

From just comparison, the nature of the adv component differs across science subs.

Like the way geos adv is different is really different to how they do it in bio or chem and stuff. (I've done Adv/SSP bio, adv chem and adv geos as background lol)

But generally, if you are eligible it's good to consider them strongly.
