I'm doing Coleridge for my prescribed text, but I can still use a poem from the Stimulus booklet right?

Since I believe it is a poem wouldn't it be advised to use a variety for text types so maybe not use another poem?

Basically, there's nothing stopping you from using another poem, but you are highly recommended against doing 2 texts of the same text type basically because it tells the marker that you aren't creative, giving a bad impression as they mark your essay and in a way it's boring two novels for example.

You are allowed to to use a poem from the Stimulus booklet. There is no fixed rule that says you can't. However, in one part of the performance descriptor for band 6 it states:
.....................Displays a highly developed ability to describe and analyse a broad range of language forms, features and structures of texts and explain the ways these shape meaning and influence responses in a variety of texts and contexts....................
The more variety you have in your texts, the better. The reason is, because the markers like you to display various forms of analysis including aural, visual and language analysis. You are advised to explore various aspects of texts which display an extensive knowledge of how the meaning of a text is shaped. In order to exhibit a plethora of knowledge about the English language, it is best to vary your text types as much as possible.
