1 cup of chickpeas
1 tomato
1 red onion
mint leaves
lemon juice
cumin
olive oil
parsely
oregano

i love salad.

my mum makes this awesome one with avocado, lettuce, cherry tomatoes, and lots of balsamic/olive oil dressing. so perfect.

also even just fennel with white balsamic vinegar is amazing. (wait can that even be classed as salad, lol?

rocket and balsamic is always win.

another favourite of mine: grilled chicken orange slices rocket water chestnuts corn cucumber. so good.

One I made the other night was delish!

Roast pumpkin (+ sweet potato if you wish) wish a small amount of olive oil, homey and mustard.

Mixed salad leaves (or what ever ones you like)

Fetta cheese

Hard boiled eggs (still a little runny on the yolk)

Steamed beans

Cracked pepper over the top with a drizzle of lemon.
