What happens when a silver halide (e.g. silver nitrate, silver chloride, silver bromide) is in a dark cupboard, then is exposed to sunlight then exposed to UV light respectively? What is the science behind this (like reactions that take place etc.)?

Decomposition, they're decomposed by UV light.

Like...

Silver Chloride --> Silver + Chlorine
