In essay questions where it says "How has the representation of these viewpoints influenced your response to these texts?"

Can we actually use personal terms. e.g. "I", "Affected my viewpoint by..." etc.
and if we do, how often in the essay would we use it.

Yes you can. Every year (literally I think) there is a personal response question. This means that you have to specifically refer to how it has affected you.

For example, I do Brave New World and Blade Runner and had a personal response question in my trial. I would uses phrases such as 'the marginalisation of nature within the World State has revealed to me the inherent value of a qualitative relationship with nature'

I tend to top and tail my paragraphs. Refer to it in the topic sentence and sum up sentence.
