So I've got, hardness is a measure of the calcium and magnesium ion concentration. If water is too soft there will be corrosion problems in the pipes, if it's too hard then it won't lather with soap.

Two questions: is hardness just measured using AAS? and how is hardness altered in water treatment?

Hardness of water can be measured by determining the total concentration of calcium and magnesium ions in water and expressing the result as mL of CaCO3 per litre. This can be done by using a volumetric analysis. The titrant used is the disodium salt of EDTA (ehylene diamine tetracetic acid) - ask your teacher for more info.

Water can be softened by either ion exchange or by reverse osmosis.
