B Aviation (Flying) - UNSW
B Technology (Aviation) - UNSW@ADFA

They are the only uni courses I can think of, most pilots just enroll in flight school

Army, Air Force and Navy all have pilot schemes. The alternative is a B.Sc. (Aviation) at UNSW (I think it's a B.Sc.). Or you go to a private flight school and go for your CPL, get rated and apply to major airlines for cadetships.
It should be noted that of these, only the Air Force offers pilot programs in fixed-wing aircraft. The other two branches only have direct control of choppers.

OP: Do BTech (Aviation) at ADFA. You want to fly big commercial flights around the world? (a surprisingly realistic dream compared to some others on this site; kudos to you) Nothing will get you valuable experience and a boost up in your profession like the military. Most former fighter pilots go on to be commercial pilots. You don't even have to be a fighter pilot. You could fly choppers, the big transport planes or observation aircraft.

From someone with an ATPL and pilots license.

First only 60% of 18 year old males will pass a medical for a pilots licence so get to a designated aviation medical examiner. (They are listed by CASA)
