There is more value in studying a higher-level course than the advantage a student might gain in UAI terms.

Yes, that same concept would apply to the general maths and mathematics courses.
However, general maths and mathematics are
not scaled as a singled course. They are scaled separately and, as a result, the former tends to be scaled down, whilst the latter tends to be scaled up.

Yes, she's right there too.
In simple terms, there are very few band 6 outcomes in the Standard course which students are able to demonstrate achievement of in a two hour examination. But this doesn't have anything to do with UAIs.
