In Yr 11 I beat my 2U marks in my 3U exams, but I wouldn't suggest that 3U was easier, and that trend didn't continue into this yr 12 either.

Yes they can re do the exam and the updated mark will be used. I had a friend who was doing accelerated 2u 3u 4u, although he didn't re-sit the exams he spoke about how the process worked.
thsconline is a wesbite that has lots and lots of past papers for yr 11 and yr 12. These are for multiple subjects as well. A simple Google search should find it.

There are A LOT more papers for the HSC over prelim. The difficult is your new syllabus, which makes them redundant (to some extent - maths is still relevant)
