Out of curiousity, if i major in both medicinal chemistry and pharamcology at usyd what can I do with the degree?
Will I become a pharmacologist or medicinal chemist or both?

You can't major in both. For a pharmacology major 24 senior credit points are required and only 24 credit senior credit points are offered. No one unit of study can count towards more than one major. You'd have to choose one or the other. I'm doing medicinal chemistry.

Medicinal chemistry is just the first half of the pharmacology plus half of a chemistry major. Personally I like it... two favourite sciences... and yes it's hard, for me. I prefer my arts degree but wtf am I going to do with it?

I came to uni having no idea what to study... so I started with what I liked and went from there... plus doing two languages should give me a significant advantage.

I've heard that you don't pick your majors until second year... is that true?

You can 'pick' your majors anytime you want. You just need to do the right first and second year subjects to allow you to enrol in the required senior units. So it's best to think about it from first year.
