Most likely pendulum, else they may make you drop a ball? [highly unlikely due to high chance of random error]

Already done pendulum experiment.

Teacher gave us a clue that we have to derive an equation and it will be related to projectile motion.
Why would you need to derive an equation for projectile motion? All of the equations you use for projectile motion are on the data sheet. The only experiment you would do for projectile motion is like what Animex said.

Other than pendulum, last year, our teacher tried out a new experiment (never before used in a prac test) where we used a burrette to drop water slowly only a small tin tray, then find the quantity for acceleration due to gravity.

You could get one regarding the distinguishing of inertial and non-inertial frames of reference.

Best one to use for this is the water/fluid in a glass container which is rolled at a constant velocity, and is accelerated and the results are compared.
