Given how many people are oh so adventurously naming Hendrix's All Along the Watchtower, this could almost be a best cover of a Dylan song thread (though that could probably get a thread unto itself).

I really like George Harrison's If Not For You.

While we are on the topic, I might add that good covers of All along the watchtower have been done by Michael hedges, and Clapton/Kravitz.

The is also an incredible version of stairway to heaven, which sounds like it's done by Pink Floyd. I'm positive it isn't by them, but I'm not sure who it is. It can be found through any file sharing program though.

I actually think Guns 'n' Roses' cover of Cats in the Cradle is fantastic.
Also their cover of Live and Let Die is one of my favourite songs EVER.
