I like rice, lentils and curry powder, all mixed up and nuked for however long it needs to get hot. Only thing is, you've gotta remember to start it soaking in the morning so that it's ready for lunch.

pumpkin gnocchi with basil + pesto sauce. takes in the vicinity of 5-10 mins depending on how long your water takes to boil and is really yum. i'm going to experiment with pumpkin gnocchi and other sauces now

Some salads are really good because you can prepare them when you have time and then eat them when you are too busy to cook.

Waldorf salad is very easy.... chop up celery, green apples and walnuts. Add mayonaise. Stir.

Caesar is yummy but it isn't very cheap if you want to use real bacon, anchovies etc....

Pesto pasta salad is easy to make.... cook some pasta, put it in the fridge.... add mayonaise and some basil pesto, stir. You can make different kinds of pasta salad with veggies and stuff in it.

Pasta (I use spirals because they're easily managable but whatever you prefer)
Sundried tomatoes
Black olives (preferrably w/ chilli but whatever you have/prefer)
Parmesan cheese

1) Cook pasta
2) While waiting, cut up sundried tomatoes into strips/chunks, de-pit (pitting? pit? what's the grammar?) the olives and cut these up into 3rds (or so)
3) Once pasta is done, throw the olives and tomatoes into it, grate parmesan over the whole lot (I prefer the big, coarse grating... side... but others mightn't)

Can put some basil into it all if you're really inspired, but all in all it's very easy and impressively tasty for the effort.
