What do you mean 'what does my course involve'? Commerce and maths basically. You'll have to be more specific =(

But uhh, I chose it because I was told to take a Science degree and go from there. I had good memories of Commerce from high school and I had an opportunity to take Adv. Maths so I did. It allows me to pretty much get any mathematical job I want after graduating, or it can get me into the business world.

For my Science degree I'm getting mathematical expertise that I can either use to get a job or be a foundation for graduate stuff, for other majors it'll depend on what one picks.
be an actuary: best combination of Maths and Commerce together :p

what kind of jobs would be open to you if you did anthropology, science and international studies at uni? There's the UTS B. of Science/B of Arts in International Studies, is that useful?

Science and international is a good course since scientific research is dead in Australia.
You can probably research countries where scientific research is more alive and migrate to there/work overseas.

Yer its great, if you have a passion for the field, you'll love it. just be wary the economics units at mq are quite difficult and have high failure rates, but if you enjoy it, then you will do well, but alot of ppl do struggle.
Shouldn't be too hard :p i enjoy economics and maths, so this course will be fun

but there wouldn't really be many jobs that would fit to those courses, could you name any of the top of your head?. i'd like to become genetic anthropologist, but i mean others have already found out the major information and research related to genetic anthropology, so there really isnt anything knew i could do.

Plus it's a lame(r) uni than UNSW for under grad

If you want to become a genetic anthropologist, I would suggest picking something that's related to this and that is more main stream and beside as you said, the major stuffs in genes have already been discovered.
Ofcourse there would be plenty of jobs which fits into this course. For example, biotechnology/environmental science (although environmental engineering would be better) is a rapid growing industry. Since you're interested in genes and stuff, then biotechnology would be great for you + it's a growing industry.
After picking a main stream research, then pick a country which has a demand for your research e.g. China is screaming out for environmental science/engineerers, and I also heard they pay quite high for bio-technologists.
