It's best to say nothing at all rather than to say something stupid. Go talk to some medical specialists. Many are unsatisfied, and they have studied for far more years than actuaries.

Correct. But you generally need to be quick with your maths, and be decent with some degree of stats as they will ask you probability questions in the interview. (at least sig do)

I have quite a lot of contact with mining companies with my job, and they tell me that they hire chem grads for environmental impact studies and also process roles. I suggest looking at BHP/Rio Tinto websites. For many of them, you can still live in Syd/Melb/Bris.
